Every ingredient is carefully chosen to ensure that it is fresh and of high quality to allow us to bring out the flavours of our creations. We are inspired by traditional Basque recipes, which have been handed down from generation to generation to preserve their essence and authenticity. However, these classic recipes have been reinterpreted with a contemporary twist under the creative guidance of Zuriñe García and her team, who bring their talent and knowledge to provide an innovative culinary experience that is faithful to tradition at the same time.

Our chef is one of the few women to have taken charge of a Michelin-starred restaurant, a distinction that attests to the level of excellence of her work. In 2018, her career was recognised by the Basque Academy of Gastronomy, which honoured her with the award for Best Restaurateur, thereby consolidating her position as one of the top names in contemporary Basque cuisine.

Every dish in our restaurant is the result of this fusion of tradition and creativity, with the aim of providing a sensory experience that will delight even the most demanding palates.

“El Txakoli” represents the foundation, roots and the purest essence of El Paladar by Zuriñe García.
